Eating Well at Fairhaven — National Nutrition Month and Beyond

March is National Nutrition Month, a perfect time to focus on eating well–but at Fairhaven, we celebrate a healthy lifestyle all year long. We recognize that a well-balanced diet can help you maintain good health, stay energized, and get the nutrients you need while also lowering your risk of health conditions such as heart disease, diabetes and even Alzheimer’s.

Culinary experience is an important component when selecting a continuing care retirement community. Residents want fresh, well-prepared food that is both delicious and healthy, served in relaxing, enjoyable surroundings. Fairhaven understands the discerning palates of our residents and guests, and we’ve responded by creating a culinary program based on scratch cooking and a holistic approach to health and wellness through dining.

We Take the Guesswork Out of Eating Well

“Each week, we highlight signature menu items that use fresh produce, whole grains, lean proteins, and have lower amounts of fat and sodium, making it easy for residents to choose entrees and sides that fit into a healthy eating plan,” explains Paul Goskowski, General Manager of Dining at Integrace Fairhaven. “The foundation of our approach is to create nourishing, memorable meals with high quality local, seasonal, and responsibly sourced ingredients,” explains Paul. “At the same time, we understand that flexibility is important. That’s why we provide a variety of healthy, delicious, and exciting menu offerings to satisfy a wide variety of tastes and preferences.” These healthful dining options are available to residents and guests, their friends and family, and our colleagues alike.

You can sample Fairhaven’s approach to dessert by making this decadent (yet good-for-you) treat. In this recipe, the heavy cream typically found in a mousse is replaced with avocado, for a smooth and creamy texture with less fat, plus a healthy dose of vitamins and fiber.

Chocolate Avocado Mousse

  • 2/3 oz agave, syrup
  • 5/8 whole avocado, peeled and chopped
  • 3/8 oz cocoa powder
  • 3/8 oz almond milk
  • 1/4 oz unsweetened baking chocolate, melted according to directions
  • 1/4 tsp vanilla extract
  • Six fresh raspberries

Puree avocado, agave, almond milk, cocoa, melted chocolate, and vanilla in a blender or food processor until a smooth mousse consistency is achieved. Divide into two serving cups, garnish with fresh raspberries. Serves two.
